Rosette in slices 100g
First, rosette is a cured saucisson ( Pork sausage) . Similar as salami it does use the noble part of the meat to be made such as leg of pork, with the skin covered in black pepper.
Then, indeed the rosette, this large sausage from the Rhône-Alpes region, is eaten throughout France, in summer and winter. It gives off a delicious scent of authenticity.
We differentiate it from other charcuterie by its traditional white string.
Rosette de Lyon is a dry pork sausage from a long tradition of artisanal charcuterie in France. Slightly conical in shape, it is made of minced pork meat and fat, spices and a hint of garlic. The meat comes from noble cuts, such as the shoulder. The mixture is then inserted into a natural pork casing, then placed in a net and dried for up to 4 months. The ripening time depends on the size of the room.

The rosette is so called because of the casing in which the meat is stuffed. This gives it a slightly pink appearance.
Salami and rosette are types of sausage. Rosette de Lyon is made from the pork leg or shoulder and usually served in thick slices. Its main difference with a traditional sausage is its weight. It can weigh up to 3kg, while a sausage rarely exceeds 2/300 grams. Salami has a larger cylinder.
