Chaource is a member of the French white mold cheese family.
Soft cheese produced in Champagne and Burgundy is characterized by a higher fat content than similar cheeses and a melt-in-the-mouth texture. In addition, after aging, the edges are smooth and have a buttery flavor. If eaten when it is young (young), Chaource has a mild taste and a milky white color.
Try it with firm bread such as buckwheat buns. Pair well with white wines with natural acidity for perfect balance.
